White Stock

Cooking time—at least 3 hr.

Ingredients

  • 2 lb. knuckle of veal
  • 2 qt. cold water
  • 1 teasp. salt
  • 1 dessertsp. white vinegar or lemon juice
  • 1 onion
  • 1 stick of celery
  • ½ teasp. white peppercorns
  • small strip of lemon rind
  • 1 bay leaf
