Fish Stock

Ingredients

  • Bones, skin and heads from fish which have been filleted or fish trimmings or cod’s or other fish heads
  • salt
  • peppercorns
  • 1 onion
  • 1 stick of celery
  • 1 blade of mace
  • 1 bay leaf
  • bouquet garni

Method

Wash the fish trimmings and break up the bones. Cover them with cold water, add salt and bring slowly to simmering point. Add the other ingredients and simmer gently for no longer than 40 min. Strain and use the same day, if possible.
