Consomme a la Celestine

Clear soup with Cheese Pancakes.

Ingredients

  • 1 qt. consommé

Cheese Pancake Batter

  • ½ oz. flour
  • ½ teasp. melted butter
  • ½ teasp. grated Parmesan cheese
  • 1 teasp. chopped parsley
  • ½ beaten egg
  • pt. milk
  • salt and pepper

Method

Make a pancake batter with the ingredients. Fry very thin pancakes in the usual way and rinse them in hot water. Cut them in short strips ¼ in. wide, and serve them in the hot consomme.
