Consomme a la Julienne

Ingredients

  • 1 qt. consommé

Garnish

  • 1 tablesp. shreds of carrot
  • 1 tablesp. shreds of turnip
  • 1 tablesp. shreds of green leek

Method

Cut the shreds 1/16 in. thick and 1–1¼ in. long. Boil them separately for a few minutes till just tender, drain them and put them into the soup tureen, pour on to them the hot consommé.
