  • 1 lb. chestnuts
  • 1 qt. stock remains of cold roast game
  • other ingredients as for Gam

Method

Score the chestnuts deeply on the rounded side, boil them for 15 min., then drain, cool slightly andremove shell and skin. Cook the chestnuts with the other ingredients in the stock and sieve them with the minced meat. Finish as for Game Purée.
