Tomato Soup—Italian

Cooking time—20 min.

Ingredients

  • lb. ripe tomatoes
  • 1 tablesp. olive oil
  • 1 pt. stock
  • 1 clove of garlic
  • parsley
  • basil
  • marjoram
  • 1 tablesp. ground rice
  • salt and pepper
  • pt. cream (optional)
  • 1 egg yolk (optional)

Method

Proceed as for Basic Recipe. Cook for 5 min. only, in stock before sieving. (The tomatoes should be chopped fine to hasten cooking.)
