  • 1 carrot
  • 1 clove of garlic (optional)


Chop the onion and carrot, crush the garlic. Cook them with the bay leaf and peppercorns very gently in the oil for 15–20 min. Drain off the oil and add the wine and vinegar. Simmer gently ½ hr. In a separate pan boil the sugar, dissolved in the water until it turns golden brown. Add to this the wine mixture. Add the gravy and any one or any mixture of the sweetening ingredients to taste.
