Ingredients

  • 4–6 cloves of garlic or 4 shallots
  • 1 egg yolk

Method

Crush and pound the garlic to a smooth pulp. Mix with it the egg yolk and salt. Proceed as for mayonnaise. Finally work the sauce gradually into the sieved cold potato. Season to taste.

Serve with salads, vegetables, fish or meat.
