  • ½ pt. Espagnole sauce or Brown sauce
  • 1 onion or shallot


Chop the onion or shallot and simmer it in the sauce for 10 min. then strain. Add the other ingredients, reheat the sauce.

Serve with steak, kidneys or fish.
