Escaveeke Sauce

Ingredients

  • 1 pt. wine vinegar
  • rind of 1 lemon, grated
  • 6 shallots
  • 1 clove of garlic
  • 1 tablesp. coriander seed
  • ½ teasp. ground ginger
  • ½ teasp. salt
  • teasp. cayenne pepper

Method

Pound all the dry ingredients well together. Boil the vinegar and pour it boiling on to the pounded mixture. Bottle when cold. Store for 1 month before use.
