Rice Stuffing for chicken

Ingredients

  • 2 oz. rice
  • the liver of the chicken
  • 1 small onion
  • 2 oz. raisins
  • 2 oz. ground or chopped almonds
  • 2 tablesp. chopped parsley
  • 1 oz. butter
  • 1 sprig of thyme
  • salt and pepper
  • 1 egg (optional)

Method

Boil the rice till just tender. Chop the liver and the onion. Mix all the ingredients, mashing the butter into the mixture with a fork. Season and bind well. Use also for meat, fish or vegetables.
