Method

Soak the fish in slightly salted water for 2–3 hr. Put into a fish-kettle or saucepan with warm water and the salt, and poach gently until done. Take 1 pt. of the water in which the fish was cooked and add to it the other ingredients. Simmer gently for about 15 min., then strain, and return to th
