Grilled Bloaters

Break off the head, split the back, remove the roe and take out the backbone. Rub over with a little fat, place the fish, inside down, on a grill pan grid. Cook until nicely browned, turn over and cook the back. If preferred place 2 bloaters with the insides together, and cook as above. The roes should be cooked and served with the bloaters.
