    • 1 lb. cod’s roe
    • salt
    • vinegar
    • melted butter sauce or other white sauce

    Method

    Wash and wipe the cod’s roe and poach for 10 min. in water with a little salt and vinegar. Dice the roe and put into melted butter sauce or other white sauce diluted with a little cream or milk. Butter 3–4 scallop shells, put in the roe,cover with brown breadcrumbs and brown in the oven, or serve on
