    Empty, wash and scale the fish. Dry well, place in a baking-dish in which a little butter has been previously melted and baste well. Season with salt and pepper, cover with a greased paper and bake gently for 25–35 min., basting occasionally. Make the melted butter sauce very thick and a few minutes before serving strain and add the liquor from the fish. Place the fish on a hot dish, strain the
