Halibut Bristol


  • 1 lb. halibut (centre cut)
  • salt and pepper
  • ¼ pt. milk and water
  • ½ oz. butter or margarine
  • ½ oz. flour
  • oz. grated cheese
  • 12 mussels (fresh-cooked)


Place the halibut in a greased fireproof dish, sprinkle with a little seasoning and add the liquid. Cover with greased paper and cook for 20 min. in a fairly hot oven (375° F., Gas 5). Remove from the oven, strain off the liquid and remove the centre bone from the fish. Use the liquid to make a creamy sauce with the fat and flour, add 1 oz. cheese and seasoning if necessary. Arrange the mussels round the halibut, cover all with the sauce and sprinkle over the remaining cheese. Return the dish to a very hot oven (450° F., Gas 8) for a further 10 min. to brown.
