  • milk or water
  • oil
  • vinegar
  • egg yolk and gherkins or diced boiled potato


Cover the herrings with boiled water and after several minutes, drain. Soak in milk or water for 1 hr. Skin and fillet, then cut into pieces and dress with oil and vinegar. The herrings can be garnished with sieved egg yolk and chopped gherkins. Alternatively mix the herring pieces with diced boiled potatoes and dress the whole with oil and vinegar.
