Method

Fold the fillets in half and steam between two plates. Meanwhile make the sauce. Arrange the cooked fish in a shallow fireproof dish, coat with sauce and sprinkle with the remaining cheese. Place under a hot grill until golden brown.

Serve with grilled half tomatoes and mashed potatoes.
