Baked Shad

Ingredients

  • One 2–3-lb. shad
  • 3–4 oz. veal forcemeat
  • 2–3 rashers bacon

Method

Wash, clean, scale and dry the fish. Stuff the fish with forcemeat and sew up the opening. Place in a fireproof dish or baking-tin, lay the slices of bacon on top and bake gently in a moderate oven (350° F., Gas 4) for 25–30 min.
