Ingredients

  • One 5–8 oz. piece of skate wing
  • salt

Method

Wash the skate, put into a saucepan containing sufficient salted warm water just to cover, and simmer gently for about 15 min. or until the fish separates easily from the bone. Drain well, dish and serve with shrimp, or caper sauce.
