Crayfish are freshwater shellfish closely resembling lobsters but much smaller in size. They are in season June–March.


To Boil Crayfish

Wash thoroughly, remove the intestinal cord, then throw the fish into fast-boiling salted water. Keep boiling for about 10 min.
