Lobster Mayonnaise may be served in either of the following ways :
(a) Cut the lobster in half lengthways, scoop out the meat from the body, mix with a little mayonnaise and return. Carefully remove the meat from the tail, slice and return to the shell, arranging it in overlapping slices with the red part uppermost. Serve on a bed of salad, garnished with the claws. Serve mayonnaise separately.
(b) Remove all the meat from the shell and claws. Arrange on a bed of salad, either cut into slices or roughly flaked and coat with mayonnaise.
The coral can be used, sieved, as a garnish or for making butter.
