Cooked prawns should be very red and have no spawn when cooked; much depends on their freshness and the way in which they are cooked. Wash well, then put into boiling salted water and keep them boiling for about 7–8 min. They are ready when they begin to change colour; do not overboil or they will become tasteless and indigestible.
