Method

Wipe and trim the meat and cut into neat fillets. Beat to flatten slightly and brush with oil or melted butter. Season to taste. Grill, then place on a hot dish. Put a pat of Maître d’hôtel butter on each fillet and serve with baked stuffed tomatoes.
