  • A thick piece of well-hung sirloin olive oil, melted butter or fat
  • salt and pepper


Wipe the meat and beat it well. Brush both sides with oil or fat and season with salt and pepper. Grill as for grilled beefsteak. Serve immediately with Maître d’hôtel butter and fried potatoes or other accompaniments if preferred.
