Method

A Ham Floor Brown Sugar Cloves

Soak the ham in water for at least 12 hr. Wipe well and trim off any rusty bits. Coat with a flour and water paste crust which must be sufficiently thick all over to keep in the gravy. Place the ham in a fairly hot oven (400° F., Gas 6) for about 15 min., then reduce heat to cool (310° F., Gas 2) and cook for the remainder of the time, allowing 30 min. per lb. Remove the crust and skin, score squares in the fat and place a clove in each square, sprinkle brown sugar over the fat. Garnish the knuckle with a paper frill. Pieces of ham will need less time to cook.
