  • 8 oz. ham
  • 4 oz. browned breadcrumbs
  • 2 oz. sultanas
  • 1 large cooking apple
  • 4 oz. corned beef
  • 1 tablesp. finely-chopped parsley
  • 1 teasp. grated lemon rind pinch of allspice
  • pinch of grated nutmeg
  • salt and pepper
  • 2 eggs
  • milk


    Well grease a bread-tin and coat with browned breadcrumbs. Wash the sultanas well; peel, core and grate the apple. Mince the ham and corned beef and mix with the parsley, lemon rind, breadcrumbs, apple, sultanas, allspice, nutmeg and seasoning. Bind with the beaten eggs and a little milk if needed. Carefully put into the prepared bread-tin and bake in a cool oven (310° F., Gas 2) for about 40 min. Serve hot with gravy, or cold with salad.
