Mince the ham and mix with the mustard, mayonnaise and sherry, cider or juice. Drain the pineapple slices and cover neatly with ham mixture. Place in a greased fireproof dish or meat-tin and bake in a moderate oven (350° F., Gas 4) for 10–15 min. Serve garnished with slices of gherkin if liked.
