Ingredients

  • A pig’s head
  • salt

Method

Clean the head thoroughly. Remove the hair, eyes, snout and brains if this has not been done by the butcher. Soak well in salt water for 2 hr., changing the water 3 or 4 times. Drain the head well, place in a large saucepan and just cover with cold water. Simmer for 3–3½ hr. or until tender.
