Ingredients

  • Trimmings of cold roast chicken 3 oz. cooked ham
  • salt and pepper
  • nutmeg
  • 2 oz. butter clarified butter

Method

Mince chicken and ham very finely, season well, add pinch of nutmeg, and work in butter gradually, making the mixture as smooth as possible. Press paste into small pots, cover contents with clarified butter.
