  • 2 turkey legs
  • salt and pepper
  • cayenne pepper
  • mixed mustard or French mustard
  • butter


Remove skin from turkey, crisscross with deep cuts. Sprinkle well with seasoning and a little cayenne, if required, very hot. Spread with mixed mustard (or French mustard) pressing well into the cuts and leave for several hours. Grill 8–12 min. until crisp and brown, spread with small pieces of butter mixed with cayenne, and serve immediately.
