Cut the points and tender green parts of the asparagus into short pieces, place them in slightly salted, boiling water, and cook gently 5 to 10 min., according to size and age. Drain well, put the asparagus into a saucepan containing a little melted butter, sprinkle with pepper and toss over heat for a few minutes. Serve as a garnish or a vegetable or as a filling in omelets.
