Method

Wash the beetroots carefully. If the skin has been damaged in any way, cover the damaged part with a little flour-and-water paste. Put them into a baking-dish and bake in a moderate oven (350° F., Gas 4), until tender, about 1 hr. This method is excellent for young beetroots, all the flavour and sweetness of the beetroot being retained.
