  • 1 large, fresh cabbage (about 2 lb.)

Method

Cut across the end and remove only the very thick, coarse piece of stalk and shrivelled or discoloured outer leaves. Pull off the green leaves and put to soak, with the heart cut into 4 pieces, in cold water with 1 teasp. of salt per quart of water. Soak for 10 min. only. Wash thoroughly under runnin
