  • 6 small lettuce
  • 1 oz. butter or margarine
  • 1 oz.


Wash the lettuces well. Plunge into boiling salt water and simmer 2 min. Plunge into cold water, drain. Melt the butter in a saucepan, add the flour, mix well, then add stock and stir until smooth and thick. Add chives, bay leaf, parsley, and a little salt and put in the lettuces. Cook gently for ½ hr., stirring from time to time. Re-season and serve.
