  • Dried peas
  • 2 qt. boiling water to each
  • 1 lb. peas


Pour the boiling water on to the required weight of peas, add the soda, and leave to soak overnight.

Rinse the peas thoroughly after soaking, cook in plenty of boiling, salted water until the peas are soft —1 to 1½ hr. approximately.

To improve the flavour, add a sprig of mint, bunch of herbs (a small sprig of marjoram, sage, thyme and a few parsley stalks) or an onion stuck wit
