  • pt. split peas
  • 1 small onion
  • small bunch of herbs

Method

Soak the peas overnight; remove any discoloured ones. Rinse and cover with cold, salted water. Bring slowly to boiling-point in the water, to which has been added the onion (whole) and the bunch of herbs. Simmer very slowly until tender—2–2½ hr. Drain well and rub through a sieve.
