  • 1 oz. butter or margarine

Prepare and cook potatoes as for Boiled Potatoes. Pass them through a wire sieve or through a potato masher, or mash with a fork or the end of a rolling-pin. Melt the fat (in one corner of the pan if the potatoes have been mashed in the pan itself) and beat in the potatoes. Add milk gradually and beat well until the mixture is thoroughly hot, and smooth.
