Game Salad

Ingredients

  • 1 lb. of remains of cold game
  • 2 lettuces
  • 1 hard–boiled egg
  • mayonnaise sauce
  • cayenne pepper and salt
  • beetroot

Method

Dice the meat. Shred the lettuce finely. Stamp out star-shaped pieces of egg white and beetroot. Mix the meat and chopped egg yolks and remains of whites. Arrange meat, lettuce and mayonnaise in alternate layers in a salad bowl, seasoning each layer, and pile in pyramid shape. Cover the surface with a thin layer of mayonnaise sauce. Garnish with the stars of beetroot and egg white.
