  • pt. milk
  • 1 bay leaf or pinch of ground cinnamon or orange

Method

Bring the milk slowly to the boil, with the flavouring ingredient (not ground cinnamon); then remove the flavouring. Add the vermicelli, broken into short pieces, and the salt. Simmer until tender, then cool slightly. Separate the eggs. Add the sugar, ground cinnamon (if used) and egg yolks and stir well. Lightly stir in the stiffly-whipped egg whites.
