  • 2 eggs
  • pinch of salt
  • 1 tablesp. cream or top of the milk


Beat the eggs thoroughly with the salt, cream and castor sugar. Heat the butter in an omelet pan and remove any scum. When the butter is really hot pour in the omelet mixture and stir until it begins to set. Fold away from the handle of the pan. Cook for another minute and then tip out on to a hot dish.

Dredge with castor sugar and serve at once.
