Ingredients

  • 8 oz. plain flour
  • teasp. salt
  • 3 oz. beef dripping
  • 2 level teasp. cream of tartar
  • 1 level teasp. bicarbonate of soda
  • 4 oz. moist sugar
  • ½ lb. sultanas
  • 2 oz. mixed shredded peel
  • 1 egg
  • gill milk (approx.)

Method

Sift flour and salt and rub in the fat. Mix raising agents thoroughly with the flour and add other dry ingredients. Beat egg and add with milk to make a soft dropping consistency. Place in a greased 7-in. cake-tin and bake in a fairly hot oven (375° F., Gas 5). Reduce heat after 15 min. to moderate (350° F., Gas 4).
