Butter Icing

Butter Cream


  • 2 oz. butter or margarine
  • 3 oz. icing sugar
  • flavouring
  • colouring


Cream the butter or margarine. Add the sugar gradually and cream together. Beat until smooth, creamy and pale. Add flavouring and colouring to taste.


Almond: Beat in ¼ teasp. almond essence.

Chocolate: Dissolve 1 oz. chocolate in 1 tablesp. water and beat in, or beat in 1 dessertsp. cocoa and a few drops of vanilla essence.

Coffee: Beat in 1 dessertsp. coffee essence.

Jam: Add 1 tablesp. strong-flavoured jam, e.g. plum, raspberry.

Lemon: Beat in 1 dessertsp. strained lemon juice.

Orange: Beat in 1 teasp. strained orange juice.

Vanilla: Beat in ½ teasp. vanilla essence.

Walnut: Add 2 oz. chopped walnuts and 1–2 teasp. coffee essence.
