Ingredients

  • 1 lb. cooking apples (prepared weight), finely chopped
  • 1 lb. currants, cleaned and picked
  • 1 lb.beef suet, finely chopped
  • 1 lb. large raisins, stoned and quartered
  • ½ lb. sultanas, halved
  • 1 lb. demerara sugar
  • 2 oz. almonds, blanched and finely chopped
  • ½ gill rum
  • 2 oz. each candied lemon, orange and citron peel, all finely chopped grated rind and juice of 2 large lemons
  • ½ nutmeg, finely grated
  • ¼ level teasp. each ground cloves and cinnamon
  • teasp. each ground mace and ginger
  • ½ level teasp. salt
  • ¼ pt. brandy

Method

Mix all the prepared ingredients together, stirring well and cover closely in clean dry jars. Keep for 2 or 3 weeks to allow to mellow before using.
