For Pies, Tarts, etc.

  • 1 lb. plain flour
  • pinch of salt
  • 10–12 oz.


Sift the flour and salt together. Cut the butter into small pieces and rub it lightly into the flour, using the fingertips. Add the sugar and mix to a stiff paste with the egg yolks and 1 tablesp. cold water, using more water if necessary. Use as required.
