Method

Line 15 patty tins with the pastry. Cream the sugar and egg yolks well together till thick and white, and add the cake–crumbs, chocolate, cornflour and melted butter. Whisk the egg whites till stiff and fold them carefully into the mixture. Fill the patty tins and bake in a fairly hot oven (400° F., Gas 6) for 20–25 min. When cold spread with chocolate glacé icing.
