Line about 30 patty tins with the pastry. Put the sugar, butter, juice of 3 lemons and the grated rind of 2 lemons in a pan and stir till the sugar is dissolved. Add the beaten eggs and stir over a gentle heat until the mixture becomes thick. Allow to cool, then ¾ fill the patty tins with the mixture.
