Whisk the egg whites to a very stiff froth. Add a good seasoning of cayenne and a little salt to the cheese, then stir it lightly into the whisked egg whites. Have ready a deep pan of hot fat, drop in the mixture in small teaspoonfuls, and fry until nicely browned. Drain well, and serve sprinkled with Parmesan cheese and more cayenne pepper.
