Vol-au-vent shapes or comet shapes—filled with savoury mixtures—are excellent for buffet parties. They can be served hot or cold. If the mixture is being put into the cold pastry cases make sure it is quite cold. If, on the other hand, it is being put into hot pastry cases heat the filling and the pastry separately, and put together at the last minute, so that the filling does not make the pastry soft.
