Swiss Eggs


  • 1Β½ oz. butter or margarine
  • 2 tablesp. grated cheese
  • 4 eggs
  • good pinch of salt
  • pinch of pepper
  • cayenne or paprika pepper


Well grease 4 small dishes. Put Β½ the cheese at the bottom of the dishes. Carefully break the eggs and put one into each dish on top of the cheese. Cover with seasoning, cheese and butter. Bake for about 10 min. in a fairly hot oven (400Β° f., Gas 6). Garnish with pepper and serve at once with hot rolls or crisp toast.
